Summer lunch

 
I can't believe that we're actually having such a nice weather. It won't last much longer so we've to seize the opportunity and eat outside!!

Today Jakob did all the cooking and managed to do a superb lunch with the few things that we had. A fresh salad with some tomatoes and cucumber, some grillad spinach and red onion from our garden and a light fritatta. All accompanied with naan bread (bought...).

Fritatta (rösti/råraka)

Two potatoes
One small onion
One egg
Herbs
Salt&pepper

Grate the potatoes and onion on a bowl and mix with the egg. Add some nice herbs (I took oregano, basil and thyme from the garden). Salt and pepper.

Fry until golden in a sauce pan with olive oil.
